Just bought a set 2nd hand but without fitting instructions, anyone with them willing to share? Cheers in advance
I can't help you much but I've seen that kit on hypers in the past. The whole lot goes on the tank cover or replace tank cover. You mount the harness and the two panniers zip/clip on, as does the tank bag.
After looking back I sold it to @Smudgerii , I believe he has now sold his bike so it might be worth asking if he has it for sale.
I had a set of that soft luggage, came as part of the deal when I bought the bike. Used it once on a camping trip to Wales. No instructions with my kit either but it was all pretty obvious once you work out what goes where. From memory the 'wings' on the main section go over the fairing side panels - there are little 'pockets' that the tip of the panels fit into? The straps go around the frame and the side pods then clip/zip onto the wings. You can get quite a bit of stuff in the pods, more than you'd think, but i found they got in the way a bit when riding. More importantly I found it a real faff to fit/remove - just way too many straps to fiddle with. If you leave the main section in situ it's useful as for the tank bag / tank protector but I got a Famsa tank bag instead and sold my kit to a bloke in Scandinavia...

From memory main section just sits on top of the tank cover leaving the the petrol cap accessible via the hole.
