At least we are sort of agreed on a way forward, I hope the right people read this forum For me, it’s not so much about fairness, more finding a way that there is no real argument against, which is why I totally agree with @damodici on the 2 referendum method.
For me its totally about fairness of the question put to the voters. Equal billing for the three options. If the process is not demonstrably fair, there will always be an arguement as to why the result is unfair and the arguements will continue. We all want to get to the same place, resolution of this situation.
Do you not see the potential problem with 2 Leave options and 1 remain ? ( we are going round in circles I fear).
Do you not see that by not providing a clear choice of known options, there will never be acceptance. Imagine we are all going on a trip. There are three destinations on the list. Only two are given equal billing and can be voted for, after that we vote again on the winning destination and another one...
That's not what's happening though, or being proposed. Sticking with the analogy of destinations; Should we go to Mexico or Australia on holiday? Australia wins Should we therefore fly to Melbourne or Brisbane? I can see how that's complicated in the mind of a 2 year old but anyone else? Not really

2 referendum first one = leave or remain second one if required = no deal or deal Is that really not clear ?
If the EU say "NON" to an extension then it's probable. 10% chance that parliament would revoke article 50.... expect wide spread riots. 50% chance that parliament actually agree the excellent BBD (BORIS BREXIT DEAL). 40% chance that CLEAN BREXIT happens by default.
Why if people vote for Leave do we then not just immediately leave as we would if the people voted Remain? When the government has to be repeatedly taken to court to obey the law, many will never vote for Leave even if they are accepting of Leave with a deal, as the government are untrustworthy and likely to move the goal posts. Alan I understand you think of it as North France, South France & Spain, but others don't.
personally i dont think the deal or no deal one is required..surely that option cant really be decided until we see what deal is possible, then we chose if we accept it or leave with no deal... what shouldnt be done is have a law passed that removes the possibility of a no deal brexit as that also removes any bargaining power the uk may or may not have..
