My first question would be is, where would I lane and how would I get there, I.E. van, trailer etc which is extra cost. Generally I'd stick to 250 ish engine size and one of the more recognised makes for no other reason than access of parts
buy or borrow an OS map check the bridleways or bye-ways (legal) or join TRF, get a road legal trailie, 250cc more than adequate.
I went firetrail riding with some mates and I had an old xt400 which amazed my mates at how much traction it had chugging up steep hills and throught thick mud. Feck all good tho for the yeeha action and the suspension was laughable compared to their motox stuff

you don't want a pretty bike for going of road. you want a slightly scruffy but incredibly reliable well maintained one where parts are easily sourced. something like mine tbh.

Any model of 250 Yam or Honda will do you fine ... just make sure it is as good as you can get for your budget. Don’t worry about cosmetics, just make sure the engine and suspension are good. I had a Yam TTR250 for many years - the perfect bike for green-lane novices. The Serow (on the right) has the same engine but a lower seat height. I traded it in for a Honda CRF250 Rally last year for a trip down all the way through Spain to Morocco to go camping in the Sahara
Cr250 I thibk, old 4 strong thumper. Where the 2 strokes were using all their revs and not able to get up hills, mine was 2 or 3 great and just pulled and pulled
Definitely not inside leg challenged here - 35” The budget of 1k is just because this is for fun and I know I will drop it several times so as long as it’s mechanically reliable I’m not too fussed about cosmetics/age/brand (but spares must be readily available). ps. What model Honda is that?
