I've already made a huge batch of courgette, potato, spring onion and cheese soup. any 'recipes' involving Suzi perry, courgettes and back doors my amuse you, but can't be cooked! cheers!,

just like the occupants of parliament...... but thats a different thread. come on ET, live a little dangerously....release your inner Medditerrneano, try a few slices of courgette, griddled with a criss cross burn pattern , and sprinkled with a little honey and goats cheese. lovely tapas type snackette...

I love tapas/Mediterranean type snacks/meals. I grew up on them and have them at least twice a week if not more. If I had to choose a last meal before I die it would include fried peppers, Gambas fried in garlic oil, squeezed Italian plum tomatoes on wet/oiled/salted bread, Italian sausage, pecorino/parmesan cheese and lots of Italian bread to dip in the juices of the peppers and Gambas. My mouth is watering just at the thought. But courgettes are just tasteless nothingness. There's nothing you can do to make them interesting or tasty. Fact. They'll not be in my last ever meal I can tell you that.
As this forum has an Italian flavour try ratatouille the Italian way, roasted rather than simmered: Toms (tinned and/or fresh), extra tomato puree, onions, courgettes (washed not peeled), long sweet red peppers (deseeded), standard green and red peppers (deseeded), aubergines. Proportion of each is up to is up to you but chop into course chunks, mix together, drizzle generously with extra virgin olive oil and a teaspoon or two of chilli powder (or a little fresh chilli finely chopped if you know the strength), basil, oregano, salt and pepper for seasoning. No water at all but you can add thinly sliced carrot for a richer taste if preferred. Use a large oven tray @ 150c fan/160c for 1 to 1.5 hours. Stir/mix once or twice during roasting Buon appetito

You could say the same about water, but add a few more ingredients and a bit of magic, and out comes beer, whiskey etc.
But that would just be pea and mint soup, which does not fulfil the OPs request for courgette recipes!

That is extremely useful as I have lots of courgettes, tomatoes and some onions in the veg plot. Also the chillies and the herbs and shortly, the aubergines. So just need to score some peppers. Hmm. Looking forward to this. Are you Nigelo Lawson?
