Due to my heavy handedness, I’ve managed to break off part of the plastic mechanism that locks the panniers into the subframe on the bike, I’m sure in the past when looking for parts I’ve seen an exploded diagram of the panniers on parts sheets, not had any luck finding it this time Any ideas ?

I use those small epoxy syringes that mix the compounds as you squirt. The heavy duty one is VERY strong and will likely fix your problem. Also, PM me, I have both LH and RH panniers spare, I might be able to get the parts to you if I know exactly what you need.
The two parts that slot into the subframe are numbered #4 (rear) and #8 (front, integral with a larger part, expensive too) in the diagram that @freshage linked to. There's a PDF version attached here.
