i was a bit of a chef once myself. when i say chef i had a burger van. make a mean burger or hot dog byraway.
Steak isn't venison Venison may be great, but it's not entrecôte great. No fat in venison and fat is essential for a great steak. A real barbecued steak tastes of barbecued steak. Barbecued pork or lamb might be tasty, but it isn't the same thing. Soy sauce? This is completely different. All a steak needs is beurre café de Paris.
I'd vote for a thick, juicy medium-rare Rib-eye. A big garlic-buttery mushroom. And plenty of black pepper. Damn. I'm hungry now!
Venison is not steak indeed and does have a lot less fat but this doesn't take away from its flavor or tenderness. A fillet steak has a lot less fat than your entrecote but i prefer fillet (well some times). I wasn't really comparing the two just saying in my mind venison is the best meat by far flavor wise (also happens to be a whole lot healthier than beef) Given a choice between the 2 meats i'd pick venison but i LOVE beef as well and eat steak 3-4 times a week (im gunna die young) I like ya garlic butter or cafe de paris but for something different have you tried reduced balsamic and honey? if you have this with ya steak and if you happen to have baby potatoes with sour cream on the same plate when the two meet it is LOVELY!!! Its easy to make. reduce balsamic by about half put in honey bout 20% (to taste really) and reduce a lil further. Keep an eye on it because it is easy to make toffee at this point and as lovely as it smells from a distance do not lean over pot and inhale (its vinegar vapor ffs) should be about the consistency of condensed milk. drizzle around ya plate in a pretending to be a chef manner and plonk ya steak on it.
nice food is one of the few true pleasures in life.. what you decide is nice is up to you. in my mind why eat crap when for little more money (albeit a lil more effort) you can eat something nice. You are old skool english aint ya!!!???
Just had a nice bit of steak tonight - Martin made bernaise sauce - bit annoying having to buy fresh herbs rather than pick in you own at this time of year
