I'm still working thru last years pots of strawb and raspberry jam, and some outstanding black currant jam, pyo fruit from a good place near Taunton.
I'm still eating some jams that were made 4 years ago. It's vintage jam now. I make far more than I can possibly consume.
Last year I experimented with some marmalade mix from a tin and rhubarb, it is ok but I still have loads left and it is only OK, probably destined for the compost heap as I need the jars for lemon marmalade.
That's sounds like a business opportunity window - aged jams. Jams aged in bourbon barrels, blended jams, single fruit jams and of course Johnny Glid black label jams! I'll be on dragons den next week- this time next year we'll be jamionnaires....
Messed about in garage this morning - just put an apricot polenta cake in the oven - it's going to have lemon drizzle icing
