  13. Bought a selection of dry bags in different sizes. From 2 to 25 litres.

    Time for cooking!

Made "choux farci de la Bénichon" (that will be "stuffed Bénichon cabbage) which is brilliant but time consuming:

    Get a dense white cabbage.
Carefully peel 12 of the leaves off without breaking them (this will take an age and test your patience).
Blanche them for 3 mins, pop into iced water, drain.

Create the stuffing out of 150g minced veal, 150g minced pork, 150g minced ham and bacon, 3 egg yolks, 80g breadcrumbs, 80g finely chopped shallots. Salt. Pepper.
Divide the stuffing into 12 and carefully wrap up each part in a cabbage leaf, with a rasher of bacon on the top. Tie up with string in small parcels.

Put your 12 parcels into a large pan with a pig's trotter, bouquet garni, a leek cut into about 6 lengths, and a carrot ditto.
Fill half-way with beef stock (cube). Simmer for 45 mins.

Eat with boiled potatoes and a little dijon mustard.

Then I made a lemon syllabub - a confection entirely of sugar, double cream, sherry and lemon juice, all whipped together. Put into wine glasses, decorated with lemon zest and hundreds and thousands. Fridge.

Dog out for walk in mud. Wine. Ate my creations (well, some of them). TV.
Quite a fulfilling day in the circs.

  16. Got up at 5.30. Messed about on t'internet for an hour. Showered, shaved, dressed and went to office. Was in office for 7.15am. Did crappy paperwork and couple of proposals this morning. Had call to lawyers from 1.30pm to 3.15pm. Then conference call with some septics at 4.00pm till 5.40pm. Drove to Leeds with SWMBO to see no2 son, fiancé and baby granddaughter. Had nice meal cooked for me. Played with granddaughter whilst wife, son and fiancé discussed wedding venues for next year. Now home and going to go to bed to faff around on here.
