A different / upgrade slave cylinder will fix the clutch weight, that combined with a different master cylinder on my 1199 gives a very light clutch (and it’s a race bike). Also look at the mapping options, if you speak to Moto Rapido they could certainly offer to reduce all maps to the wet mode (reduced power), plus change the throttle mapping to be less aggressive potentially
The perfect bike for you is a new RS660, or RS660 factory, decent value, still Italian, just had a power bump and has loads of character. And the bars are a decent step higher but not like ‘touring bike height’ and all the tech still
