iPhone iOS 7 help

I've just downloaded the newer 7 , and am having problems with it on my iPhone 4S
for a start how do I stop apps , before I'd double tap them the cross would come up then I'd close them , this now doesn't happen.
also I can't turn my phone on its side to make the internet pages bigger, what gives , now my phone looks like a kiddies play version with the look of the new characters being changed
please help because I am thinking of ending my relationship with the bitch

 

Nope if I hold an app down to close it nothing happens , if I then release it sometimes it reloads it
where would I go in settings to check or change these functions

 

Thanks arty,yes sorted that one, now how do I get my screen to display sideways for tinternet and pictures

 

Thanks TT done , pics and internet now displaying sideways , changed by sliding up notification screen and turning on rotation
