Some of these "new" café racers are 70's restorations missing a lot of parts - not impressed Started collecting parts about 10 years ago to build a proper one myself, got a frame, motor, forks, hubs and a lathe to make up buts but ran out of spare time and enthusiasm. Still have all the bits and possibly it can wait until I retire in about 10 years when I retire to pull it altogether

Check out "The Bike Shed" classified ads and search in your area. Alternatively, there are bikes you can buy brand new for an easy enough mod, such as, Guzzi V7's, Triumphs (scrambler, bonnie, thruxton), Yam SR400/500, Honda cb1100ex Or DIY it with some Hon CB, old Triumph, Maybe a Duc 600/750/900 ss (they have a nice frame that looks cool on a cafe bike).
I think they look ok - I like those "Motogadget" clocks - I reckon I might get some of those for my supermoto....
Loose the silver dream racer/polaris 70's fairing along with the pudding bowl headlight....it might become half acceptable then...
I quite like my old rocker boys Cafe Racer.Built in the late 50's-early 60's with all the bits available at the time.Most of the bits now very costly to buy.It might have useless brakes,the odd oil leak,a magneto that works when it wants to,and a ride that will shake your fillings out and make you pray that it will stop in time,but I love it to bits.
