Cheese heaven here. For the uninitiated, leave the cheese out of the fridge for a few hours before serving. Makes all the difference. Currently got some perfectly ripe cheese on the go, one esp good ‘avec des truffes’! Goes great with a nice glass of wine and fresh bread.
Brunost is made by boiling a mixture of milk, cream, and whey carefully for several hours so that the water evaporates. The heat turns the milk sugars into caramel, which gives the cheese its characteristic brown colour and sweetness. Sounds delightful!
I’m not allowed in Waitrose, M+S local is as high as I’m allowed due to being riffraff. Is it mail order do you know?

I would always buy my Christmas cheese at Neil’s Yard Cheese shop and I when I opened my bag on the train the woman opposite me physically recoiled!
I had to throw a perfectly good fridge freezer away after it housed a huge Camembert that my friend brought back from Paris. It smelled……putrified, and no matter how many times or how thoroughly I cleaned the fridge I couldn’t get rid of the foul stench.
This will be nice with cheese…if lasts! It seems the chef de maison is related to Keith Floyd..a glass is required while cooking..
