Well exactly, for a track toy, id go for something like my 1999 R1. Ive had it since 2001, but these days you can pick them up for £2k. On the road, there is very little can touch it when im out & about on it. Easy to work on, runs carbs so easy to tune & setup and race bits like bodywork etc are really cheap.
I'd give £2k for it, the frame and swing arm would be powder coated back to stock (or as close as I could get) and the panels painted stock red. I reckon I could return it to stock for a comparatively minimal cost. You would have to do every last bit of work yourself to keep it viable though, even at £2k
