A good deal of fight scenes are the product of editing together multiple short i.e. 2 secs or less, fast action clips from different camera angles & close ups rather than a single wide angle shot showing the actors full length. One of my favourites in the latter regard is the sword fight in Crouching Tiger with the last minute just fantastically choreographed and performed.
