Personally i would advise against booking ahead if possible. There are some advantages but having to get somewhere can put pressure on you that is unnecessary. This May i rode to the Dolomites to watch a day of the Giro and for the first time i had booked 4 days at a hotel in that region. It turns out they have a non cancellation policy if you want to cancel within 7 days of the booking. Because it rained for almost the entire outbound trip i would have sacked the whole thing , gone home and tried again in july to find some sunshine if it were not for the fact that i was going to be paying for the Hotel anyway. I will not be booking ahead again.
Booking ahead's fine as long as you don't give yourself too much to do. 350 miles a day is more than enough, unless you want to be head-down on the motorway all day.
Funnily enough that's just the figure i have decided is comfortable per day. When its raining all day though it seems to be twice as far as when its dry and warm.

Agree with Char , a group of us went to the Mugello gp, via France, Belgium, France, Switzerland then Italy. It payed to be flexible as a massive boulder fall had crushed a bus and we had to do a 100 plus detour in snow and rain to get to another tunnel to cross into Italy, when we did it was 30 degrees and scorching sunshine. We never booked any hotels and negotiated great deals at some really swanky hotels on the way (one 5 star hotel couldn't do enough for us), if it had been in the uk we'd have been told where to go. My 998s didn't miss a beat there and back through rain, snow and sunshine (same can't be said for the triumph, fireblade on the journey), termi's through the tunnels are awesome. just my 2 penny's worth.
