I tried a demo of your bike yesterday, Andy and it does indeed feel a tad high geared. Other than that its a beautiful bike and those Brembo Monoblocs are simply astounding.

Speed sensor is on the rear brake caliper mounting bracket, so changing sprockets makes no difference
Half a day on the dyno getting this baby setup. Switchable on-the-fly map and control. Totally transformed... the beast released! Bazazz...
Yip, the sprocket mod is great. It cost me £35 all in (a Renthal). I had it fitted for me to save hassle and time but the part was only £20. I was just short of time and figured the extra £15 was a bargain. Took all of 30 mins and I was away again.
