Pilot 3s every time, IMO it's a no brainer for all year round road riding. They are a little noisy. But, last for ages, the grip is mental. Dunlop Sport Smarts are also a good choice if you want something that lasts, gives a good level of grip and looks a little more "performance".
You can mix tyres, but only when staying within the same brand. You don't want say a Pirelli at the front and a Conti at the back. I was running a Pilot Power 2ct on the back and a PR3 on the front on my Ninja and the bike ran and felt fine
